Very few visitors to Ibiza associate the island with winemaking - believing this to be a more Spanish tradition limited to La Rioja or Penedés.
The liquid that made its way into bottles here on the islands was seen by anyone with any knowledge of wine as little better than a slightly superior form of vinegar - which goes a long way to explaining why restaurants would always serve the local wine with a dash of sweetened mineral water...
Over the past few years, however, the winds of change have been blowing, transforming the industry across Ibiza and Formentera. A new generation of dedicated winegrowers have brought new expertise and improved on the traditional wines in record time.
